Easter Sunrise Coconut Fizz

A bright, tropical Easter mocktail made with coconut water, pineapple juice, and sparkling water for a refreshing kid-friendly drink everyone can enjoy.

Ingredients
  

  • 3 oz Coconut Water
  • 3 oz Pineapple Juice
  • 2 oz Tropical Flavored Sparkling Water I mixed 1 oz Blood Orange with 1 oz Strawberry/Watermelon
  • ½ oz Fresh Llime Juice
  • ½ oz Simple Syrup
  • ¼ tsp Vanilla Extract Optional (but it's very nice)
  • Shredded Coconut and/or Pineapple Wedge for Garnish

Method
 

  1. Dip rim of glass with honey and then shredded coconut.
  2. In a shaker with ice, add the coconut water, pineapple juice, lime juice, simple syrup and vanilla extract. Shake for approx. 10 seconds.
  3. Fill the glass with fresh ice and strain the shaker liquid into the glass.
  4. Top with sparkling waters.
  5. Lightly stir from bottom up.

Notes

I suggest a tall glass for this drink. 
If you prefer a creamier drink, add a bit of Coconut Cream or Coconut Milk. Remember to eliminate the simple syrup if you do so.
If you'd like to turn this from Sunshine to Sunset, layer in a splash of grenadine for a pink sunset effect.
