Easter Sunrise Coconut Fizz
A bright, tropical Easter mocktail made with coconut water, pineapple juice, and sparkling water for a refreshing kid-friendly drink everyone can enjoy.
Ingredients
Method
- Dip rim of glass with honey and then shredded coconut.
- In a shaker with ice, add the coconut water, pineapple juice, lime juice, simple syrup and vanilla extract. Shake for approx. 10 seconds.
- Fill the glass with fresh ice and strain the shaker liquid into the glass.
- Top with sparkling waters.
- Lightly stir from bottom up.
Notes
I suggest a tall glass for this drink.
If you prefer a creamier drink, add a bit of Coconut Cream or Coconut Milk. Remember to eliminate the simple syrup if you do so.
If you’d like to turn this from Sunshine to Sunset, layer in a splash of grenadine for a pink sunset effect.
